Myles Stephenson’s Juicy Ribeye Steak Tacos with Avocado Cream
If you know me, you know I love tacos, especially when there’s a good steak involved
This recipe is all about big flavour, simple prep, and vibes that make you feel like you’re out at a street food market in Mexico, but from the comfort of your own kitchen.
We’re going in with ribeye steak, chipotle seasoning, fresh salsa, and the ultimate avocado cream sauce that will take these tacos to the next level. it is, the way you tell your story online can make all the difference.
Ingredients
For the steak tacos:
2 Ribeye steaks
Chipotle seasoning (enough to cover steaks)
Corn tortillas
Simple Salsa:
1 red onion
2 tomatoes
A bunch of fresh coriander
Olive oil
Avocado Cream Sauce:
1 ripe avocado
A bunch of coriander
1 fresh chilli
1 clove garlic
2 tbsp lime juice
3 tbsp mayonnaise
3 tbsp sour cream
5 tbsp olive oil
Water (add gradually until you reach desired thickness)
Method
Step 1: Marinate the steaks
Coat the ribeye steaks generously with chipotle seasoning. Cover and leave to marinate in the fridge for at least 2 hours — overnight if you can, for maximum flavour.
Step 2: Make the salsa
Finely chop the red onion and tomatoes. Add them to a bowl with chopped coriander and a drizzle of olive oil. Mix it together, cover, and place in the fridge while everything else comes together.
Step 3: Blend the avocado cream
Scoop out your avocado, discard the stone, and add it to a blender with coriander, chilli, garlic, lime juice, mayo, sour cream, and olive oil. Blend until smooth, slowly adding water a little at a time until it reaches a creamy, spoonable consistency. (Don’t overdo the water — keep it nice and thick!)
Step 4: Cook the steaks
Heat up a griddle pan or skillet until it’s smoking hot. Cook the ribeye steaks to your liking — medium rare works beautifully for tacos. Rest them for 5 minutes before slicing thinly against the grain.
Step 5: Warm the tortillas
Heat each corn tortilla for around 20 seconds on each side, or follow the instructions on the packet.
Step 6: Build your tacos
Layer up with salsa, slices of steak, and a generous drizzle of avocado cream. Top with extra coriander if you’re feeling fresh.

Don’t skip the resting stage with the steak — it makes the meat juicier and easier to slice.
If you want extra heat, throw a few jalapeños on top or add more chilli to your cream sauce.
Always serve tacos straight away while everything is warm.
