Myles Stephenson’s Chicken Caesar Schnitzel Sandwich

Alright, hear me out… 

When you think Caesar salad, you don’t usually think fried chicken schnitzel stuffed into a bun… but trust me, it works. This is my Chicken Caesar Schnitzel Sandwich – crispy cutlets, creamy homemade Caesar dressing, fresh romaine, all in a toasted brioche or ciabatta. Proper comfort food with a twist.

Ingredients

For the Schnitzel

  • 4 boneless chicken or pork cutlets (½ inch thick)

  • Salt + pepper

  • 1 cup flour

  • 2 large eggs, beaten

  • 1 ½ cups breadcrumbs (panko preferred)

  • ½ cup grated Parmesan (optional, mix into crumbs)

  • Vegetable oil, for frying

For the Caesar Dressing

  • ½ cup mayo

  • 2 anchovy fillets (or 1 tsp paste)

  • 1 garlic clove, finely grated

  • 1 tsp Dijon mustard

  • Juice of ½ lemon

  • ¼ cup Parmesan, grated

  • Black pepper

To build it

  • 4 brioche or ciabatta buns, toasted

  • Romaine lettuce

  • Shaved Parmesan

  • Optional: crispy bacon or tomato

Method

1. Make the dressing

Whisk mayo, anchovies, garlic, Dijon, lemon juice, and Parmesan until smooth. Season with black pepper. Chill until ready.

2. Bread the chicken

Season cutlets with salt + pepper.

  • Coat in flour

  • Dip in egg

  • Cover with breadcrumb-Parmesan mix

3. Fry the schnitzel

Heat oil in a pan over medium-high. Fry cutlets 2–3 minutes per side until golden and cooked through. Drain on kitchen paper, sprinkle a touch of salt.

4. Build Myles’ sandwich

Toast your bun. Spread Caesar dressing on both halves. Then layer:

  • Bottom bun

  • Romaine

  • Schnitzel

  • Extra Caesar dressing

  • Shaved Parmesan (plus bacon/tomato if you’re feeling boujee)

  • Top bun
